Cleanup, scape hyphens so they are not interpreted by the manpage generator.

Gao feng reported problems while getting the cluster match working with
arptables. This patch adds a note in the manpage to warn about the arptables-jf
syntax, which is different from mainstream arptables.

The manpage of xt_cluster and xt_recent had some unclosed tags.
Backslashes in commands are also not wanted because manpages are a
freeform, automatically-wrapped text.
